Let them cool on the baking sheet for 10 to 15 minutes. Bake pastries for 20 minutes until golden brown and puffed. Brush the edges of each puff pastry rectangle with a thin layer of egg wash (see photo 6). Sprinkle the crumble mixture over the apple filling (see photo 6). Make sure the filling stays inside the scored border. Spoon the apple filling onto each puff pastry piece (see photo 5). Use a pastry crimper and roll around the edges of each puff pastry rectangle. Using a paring knife, lightly score a 1 inch border around the edges of each pastry rectangle, then use a fork to prick the center area of each one (see photo 3 & 4). Cut each strip in three to make a total of 18 rectangles.Transfer puff pastry rectangles into 2 large ungreased baking sheets. Use a knife to cut along the fold marks to create three equal sized strips. Unfold the puff pastry sheets and lay out on a clean work surface. Add melted butter and stir with a fork until the mixture is evenly moistened (see photo 2). In a medium bowl, combine all-purpose flour, old-fashioned oats, brown sugar, chopped pecans, ground cinnamon and salt. Pour 1/2 cup of the room temperature caramel and stir until well combined (see photo 1). ![]() Remove saucepan from heat and sprinkle with ground cinnamon, ground nutmeg and ground ginger. Cook over medium heat for 5-7 minutes, stirring occasionally. Melt butter in a medium saucepan and then add the apples. In a medium bowl add peeled and cubed apples and toss with lemon juice. Transfer caramel to a mason jar and set aside to completely cool before using. The caramel should be smooth without any lumps. Remove saucepan from heat and stir in salt. Return to heat and stir in butter and vanilla extract until fully incorporated. Be careful, as the caramel will immediately start bubbling. Remove saucepan from heat and pour heavy cream while whisking vigorously. Continue cooking over medium-low heat for about 8-9 more minutes until the mixture turns to a deep golden brown color. Bring to a boil over medium-low heat, until the granulated sugar has completely dissolved. In a medium saucepan whisk together granulated sugar and water. Do you base it on the fact that they didn’t ring in that much? That could be due to not knowing the question, or more likely, not being quickest on the buzzer. How can you tell that?
